Christine is a modern day witch in the kitchen - she's not happy until things are bubbly and have changed colour, texture, flavour through the magic of microbial action. Growing up in Japan certainly contributes greatly to her enthusiasm for all things fermentation-related. Since moving to Europe her cravings for familiar tastes have led her to re-explore the Japanese cuisine through the lens of fermented foods. Since they are the cornerstone of the Japanese diet, she likes to think that through doing so she's able to introduce people to real Japanese food, beyond the realms of sushi.
