Craig Penlington, a young and talented chef, makes his debut in his native country, Australia. He practices in his home country in prestigious hotels, the Intercontinental in Sydney, The Hyatt Regency in Sanctuary Cove to name a few. With his experiences abroad, Beijing, Copenhagen, Berlin, London where he was able to work under the direction of Michelin-starred chefs, Geneva and Bern, he offers us today an innovative cuisine that respects the authenticity of the product. We talk about his cooking as a culinary renaissance. It is composed of particular ingredients that give the different dishes a little taste of exoticism. Since April 2000 on the successful initiative of the tenants of the DuPeyrou palace, the gourmet restaurant on the ground floor, garden side offers its guests the possibility to eat à la carte. In the summer of 2010 this same restaurant knows a spectacular moult. A contemporary but classic imprint that highlights not only the architecture of the place, but especially the cuisine of Chef Craig Penlington.
