Originally from Belle-Île-en-Mer, Gaëtan Joly has developed an instinctive yet precise style of cooking, shaped by his maritime roots and his experience in fine-dining restaurants.

He enjoys building bridges between local terroir, ingredients, and Asian influences, with particular attention to balance and to sharing his know-how.
